Clean and wash broccoli and cut into florets. Cook in boiling salted water for 6-8 minutes. Clean and wash the mushrooms. Peel, wash and halve the potatoes. Heat oil in a coated pan.
Fry the potatoes for 12-15 minutes, turning frequently. Drain broccoli, rinse with cold water and drain. Add mushrooms to the potatoes and fry for another 2-3 minutes. Wash the chives, dab dry and cut into small rolls.
Add broccoli to the pan. Season everything with salt and pepper. Add the soy cream as a blob and sprinkle with chives.
