Wash the potatoes and cook in boiling water for about 20 minutes. In the meantime wash, clean and slice the tomatoes. Cut dried tomatoes into fine cubes. Wash the thyme, dab dry and pluck the leaves from the stalks. Drain cheese and cut into slices.
Drain potatoes, rinse with cold water and peel. Cut potatoes into slices. Cut aluminium foil into 8 pieces (each approx. 25 x 25 cm). Coat the middle of each foil with oil. Place tomato, potato and cheese slices alternately on top. Season parcel with pepper and lemon juice. Sprinkle with dried tomatoes and thyme. Close the packet and grill on a hot grill for about 10 minutes. Remove from grill and serve immediately.
