Pork rib on sauerkraut

Ingredients

  • 1 medium onion
  • 2 TABLESPOONS Tomato ketchup
  • 2 TABLESPOONS Honey
  • 8 Pork ribs (about 70 g each)
  • 2 TABLESPOONS Oil
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 2 red peppers
  • 1 TABLESPOON clarified butter
  • 1 jar(s) (850 ml; drained weight: 720 g) Sauerkraut
  • 3 Juniper berries
  • 2 Bay leaves
  • 1 TEASPOON Peppercorns
  • 1/2 bunch Parsley

Directions

    Peel and chop the onion. Mix with ketchup and honey. Wash the meat and dab dry. Fry in hot oil while turning for about 10 minutes. Season with salt and pepper. Spread with prepared honey mixture.

    Clean, wash and cut the peppers into small pieces. Add clarified butter to the frying fat. Braise the paprika and sauerkraut for about 10 minutes while turning. Add juniper berries, bay leaves and peppercorns.

    Deglaze with 1/2 litre water and add ribs. Cover and cook over medium heat for another 30 minutes. Wash and chop the parsley and sprinkle on top before serving.
