Pork escalope roast with broccoli and mushroom vegetables

Ingredients

  • 1 kg Pork escalope
  • 1 Garlic clove
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 2 TABLESPOONS Oil
  • 2 Tbsp red wine vinegar
  • 3 TABLESPOONS Madeira
  • 8-10 Peppercorns
  • 2 Bay leaves
  • 2-3 stem(s) fresh or 1Tsp dried thyme
  • 1/2 l Milk
  • 750 g Broccoli
  • 300 g Mushrooms
  • 1 Onion
  • 2 Tomatoes
  • 250 g SpƤtzle
  • 30 g Butter or margarine
  • 2-3 TABLESPOONS dark sauce thickener
  • 7-10 Tbsp Tomato Rose

Directions

    Wash the meat and dab dry. Peel garlic and chop very finely. Rub meat with salt, pepper and garlic. Heat oil in a roasting pan. Brown the meat all around. Deglaze with vinegar and Madeira. Add peppercorns, bay leaves and thyme.

    Add milk and bring to the boil. Cover and simmer for about 1 1/2 hours at medium heat. In the meantime, clean and wash the broccoli and cut it into small florets. Cook broccoli for 10-12 minutes in boiling salted water. Wash, clean and possibly halve the mushrooms. Peel onion and dice very finely. Clean, wash, quarter and seed the tomatoes. Cut tomato quarters into small cubes. Put pasta in boiling salted water and cook for 10-12 minutes. In the meantime heat up fat in a pan. Fry the mushrooms for about 5 minutes. Add onion and fry briefly. Season with salt and pepper. Drain broccoli.

Drain broccoli. Add broccoli and tomatoes to the mushrooms and keep warm. Take the meat out and let it rest for a while. Pour the stock through a sieve into a pot and bring to the boil. Stir in sauce thickener and bring to the boil again. Season to taste with salt and pepper. Drain the noodles. Serve meat, vegetables, noodles and sauce together. Garnish with a tomato rose to taste

    Take the meat out and let it rest for a while. Pour the stock through a sieve into a pot and bring to the boil. Stir in sauce thickener and bring to the boil again. Season to taste with salt and pepper. Drain the noodles. Serve meat, vegetables, noodles and sauce together. Garnish with a tomato rose to taste
