Pomelo kumquat jam

Ingredients

  • 2 Pomelos (800 g each)
  • 125 g Kumquats
  • 700 g Gelling sugar

Directions

    ##Pomelo## peel and fillet, carefully removing the separating skins. Cut fillets into large pieces. Wash a small piece of skin and dice finely. Wash kumquats thoroughly and cut into thin slices.

    Weigh the pulp and kumquats and weigh the same amount of sugar. Mix fruit and sugar in a pot and add 1/8 litre of water. Bring everything to the boil. Cook for four minutes until bubbly.

    Pour into clean glasses and close them immediately. Results in three 450 ml glasses.
