Wash and stone the plums. Stir 4 tablespoons of juice and starch until smooth. Boil up the rest of the juice, wine, spices, 50 g sugar and plums. Simmer everything for about 5 minutes
Stir in the mixed starch, bring to the boil briefly. Let the compote cool down. Remove the spices
Stir yoghurt, quark and vanilla sugar until smooth. Season to taste with sugar. Fill the compote in layers into 4 dessert glasses. Decorate with wafer rolls and lemon balm just before serving
