Plum cake from the tray with walnut brittle

Ingredients

  • 500 g Flour
  • 1 cube (42 g) fresh yeast
  • 1/4 l Milk
  • 200 g Sugar
  • 1 package Vanillin sugar
  • 175 g Butter
  • 1 egg (size M)
  • 1.5 kg Plums or
  • 7-10 Tbsp Plums
  • 300 g Walnut kernels
  • 4 TABLESPOONS Whipped cream
  • 2 TABLESPOONS Honey
  • 7-10 Tbsp Grease

Directions

    Pour the flour into a bowl and make a depression in the middle. Crumble the yeast into the depression. Warm the milk slightly. Gently mix lukewarm milk, 50 g sugar and vanilla sugar with the yeast.

    Add 75 g fat in pieces and egg. Knead all ingredients to a smooth dough. Let the dough rise in a warm place for about 20 minutes. Wash plums, drain, halve and stone. Halve plum halves again.

    For the topping, roughly chop the walnuts. Put the remaining sugar in a pan and caramelise over a low heat until light brown. Add the remaining fat and melt in the caramel. Add cream and honey and bring the mixture to the boil while stirring until it is smooth.

    Mix in chopped walnuts and let the topping cool down a little. Knead the yeast dough again well and roll out on a greased baking tray. Cover the dough with the plums so that the opening is facing upwards.

    Spread the topping with a spoon over the plums, cover the cake and leave to rise for another 15 minutes. Bake in the preheated oven (electric oven: 200 °C/ gas: level 3) for about 40 minutes. Let it cool down afterwards.

    Cut the cake into pieces and serve. Cinnamon cream tastes good with it. Makes about 24 pieces.
