  • 750 g Flour
  • 1 package Baking Powder
  • 500 g Edible quark (20 % fat in dry matter)
  • 8 TABLESPOONS Milk
  • 8 TABLESPOONS Oil
  • 175 g Sugar
  • 1 package Vanillin sugar
  • 1 package (5 g) Orangeback
  • 2 kg Plums
  • 50 g Plum jam
  • 5 TABLESPOONS Breadcrumbs
  • 2 Egg Yolk
  • 30 g Butter or margarine
  • 7-10 Tbsp Icing sugar
  • 7-10 Tbsp Flour

Directions

    Knead the flour, baking powder, quark, milk, oil, 150 g sugar, vanillin sugar and orange bake to a smooth dough. Cover and put in a cool place for about 10 minutes. In the meantime, wash, halve and core the plums. Roll out approx. 2/3 of the dough on a floured work surface to a thickness of approx. 3 mm (approx. 32x38 cm) and place in a greased fat pan of the oven. Spread the dough base with plum puree and sprinkle with breadcrumbs. Spread the plums upright on top. Roll out the rest of the dough a little smaller than the baking tray and score with a grid roller.

    Stir egg yolk with 2 tablespoons of water until smooth and brush the edges of the dough with it. Place the dough grid on top, pull it apart a little and press it down at the edges. Bake in the preheated oven (electric oven: 200 °C/ gas: level 3) for 40-50 minutes on the bottom rack. Approx. 15 minutes before the end of the baking time, brush the pastry grid with the egg yolk mixture, spread the fat as flakes and sprinkle with the remaining sugar. After cooling, dust the cake with icing sugar, cut into approx. 30 pieces and arrange on a plate. Serve with whipped cream
