Peel onions and garlic. Dice 1 onion finely, cut 1 into fine strips. Press garlic through a garlic press. Heat olive oil in a pot, fry diced onion and garlic.
Add tomato paste, strained tomatoes, broth and thyme. Season with some salt and pepper. Bring the sauce to the boil and let it boil down for 10 minutes at low to medium heat. In the meantime, cut the olives in half.
Cut goat's cheese in half as well (horizontally). Wash the thyme, dab dry and pluck the leaves from the stalks. Season the thickly boiled tomato sauce with salt and pepper and let it cool down.
Mix curd, milk, oil and 1 teaspoon of salt. Mix flour and baking powder, add to the quark mixture and knead everything into a smooth dough. Form into a roll and cut into 12 pieces of equal size.
Form balls from the pieces and roll them into talers (approx. 11 cm Ø). Spread on 2 baking trays lined with baking paper and spread with tomato sauce. Sprinkle with strips of onion and olives and cover each with a slice of goat's cheese.
Sprinkle each cheese with a teaspoon of honey and bake in a preheated oven (electric oven: 200 °C/ gas: level 3) for about 15 minutes. Sprinkle with thyme halfway through the baking time.
Makes 12 pizzas.
