Ingredients

  • 1 Bread roll (from the previous day)
  • 1 Onion
  • 600 g mixed minced meat
  • 1 egg (size M)
  • 7-10 Tbsp Sweet peppers
  • 2 TEASPOONS dried thyme
  • 1 TEASPOON Sambal Oelek
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 1 TABLESPOON Tomato paste
  • 1 TABLESPOON Olive oil
  • 2 packages (400 g each) Fresh baking tray pizza dough rolled out ready to bake on baking paper (37 x 25 cm)
  • 300 g Feta cheese
  • 100 g roasted pickled peppers (glass)
  • 1 TEASPOON Sesame
  • 7-10 Tbsp Flour

Directions

    For the mince filling, soak the rolls in water. Peel and finely dice the onion. Knead the minced meat, onion, squeezed bread roll, egg, paprika, 1 teaspoon thyme, sambal oelek, salt and pepper with the dough hooks of the hand mixer to a smooth dough. Put in a cool place again. Mix tomato paste and olive oil. Take the pizza dough out of the fridge, unroll it with the baking parchment and let it rest on the work surface for about 10 minutes, side by side.

    In the meantime, coarsely crumble the feta cheese for the feta filling. Drain the peppers well and dice them. Mix feta cheese and paprika. Season with pepper. Shape the mince into 8 longish meatballs. Roll out the pizza dough a little bit bigger, cut each dough sheet into 8 rectangles of the same size. With floured hands carefully pull the rectangles a little bigger. Fill 8 rectangles with feta cheese, fold them up and press them together slightly. Sprinkle with sesame seeds. Also with floured hands, pull the remaining 8 rectangles slightly apart and fold in the meatballs, press them together, spread with tomato paste and sprinkle with 1 teaspoon of thyme. Place on two baking trays lined with baking paper. Bake the meatballs in a preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for about 40 minutes.

    With floured hands carefully pull the rectangles a little bigger. Fill 8 rectangles with feta cheese, fold them up and press them together slightly. Sprinkle with sesame seeds. Also with floured hands, pull the remaining 8 rectangles slightly apart and fold in the meatballs, press them together, spread with tomato paste and sprinkle with 1 teaspoon of thyme. Place on two baking trays lined with baking paper. Bake the meatballs in a preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for about 40 minutes. Bake the feta rockets at the same temperature for about 25 minutes. Remove from the oven and serve on a plate
