Piquant cheese pancake with spring onions and bacon

Ingredients

  • 4 Eggs (size M)
  • 150 ml Milk
  • 150 g Flour
  • 100 g grated Emmental cheese
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 1 TABLESPOON Oil
  • 1 collar Spring onions
  • 100 g Bacon

Directions

    Separate eggs. Mix egg yolks, milk, flour and cheese. Season with salt and pepper. Beat the egg whites with the whisks of the hand mixer until stiff, fold in

    Heat the oil in an ovenproof pan. Add the dough and fry over medium heat until it becomes firm at the edges. Divide and turn in the middle with a spatula. Bake in a preheated oven (electric cooker: 175 °C/ convection oven: 150 °C/ gas: level 2) for approx. 10 minutes

    In the meantime, clean and wash the spring onions and cut them into fine rings. Cut the bacon into small pieces, drain in a pan without fat. Add spring onions and fry for 2-3 minutes, turning. Remove the trimmings from the oven, pluck into pieces with two forks, add the bacon and spring onions.
