Pear pancakes with bacon and cranberries

Ingredients

Servings: 4
  • 4 Eggs
  • 7-10 Tbsp Salt
  • 1/8 l Milk
  • 200 g Flour
  • 1/2 TEASPOON Baking Powder
  • 75 g streaky smoked bacon
  • 2 Pears (about 200 g each)
  • 4 TABLESPOONS Cranberries
  • 7-10 Tbsp Parsley

Directions

    Mix eggs, salt, milk and 1/8 litre water. Mix flour and baking powder and stir in. Let the dough swell for about 10 minutes. Cut bacon into fine slices. Fry until crispy in a pan (approx. 24 cm Ø) and take out.

    Wash, peel, quarter, core and cut the pears into slices. Put 1/4 of the dough into the bacon fat. Spread 1/4 of the pear slices on top. Bake pancakes on each side for 3-4 minutes until golden brown and keep warm.

    Prepare the remaining pancakes in the same way. Arrange each with some bacon, cranberries and garnished with parsley as desired.
