Mix flour, milk, eggs and salt with the whisk of the hand mixer until smooth. Stir in the oat flakes. Wash apples thoroughly, rub dry and cut out the core. Then cut the apples into slices. Melt some fat in a pan.
Add some apple rings and fry briefly. Pour a quarter of the dough over each ring and fry at medium heat until golden brown. Turn the pancakes with the help of a pan lid and fry from the other side until golden. Sprinkle the pancakes with sugar, dust with cinnamon and decorate with lemon balm leaves if desired
