Put flour, fat in flakes, sugar and egg in a bowl and work well with the dough hooks of the hand mixer. With cool hands quickly knead to a smooth dough. Wrap in foil and put in a cool place for about 1 hour.
Finely dice 150 g pineapple. Mix with the grated coconut. Knead into the dough. Roll out the dough on a floured surface to a thickness of about 1/2 cm and cut out cookies in any desired shape. Place on a baking tray lined with baking paper and bake in a preheated oven (electric range: 175 °C/ gas: level 2) for approx. 14 minutes.
Warm the jam, pass it through a sieve and spread a thin layer on the cookies. Chop the rest of the pineapple. Decorate the cookies with pineapple, icing sugar or remaining grated coconut. Makes about 60 cookies.
