Ingredients

  • 300 g Sultanas
  • 60 g Almond kernels without skin
  • 120 g Fruit mix candied
  • 250 g Flour
  • 120 g soft butter
  • 200 g demerara sugar
  • 7-10 Tbsp grated rind of 1 untreated lemon
  • 1 TEASPOON Gingerbread spice
  • 1 TEASPOON Coffee powder (instant)
  • 1/2 TEASPOON Baking soda
  • 170 ml Guinness (Irish dark beer)
  • 2 Eggs (size M)
  • 4 TABLESPOONS Icing sugar
  • 96 (à 5 cm Ø) small muffin paper cups

Directions

    Wash the sultanas and dab dry. Finely chop almonds, sultanas and fruit mix in the universal chopper in portions. Mix in flour, butter, sugar, lemon peel, gingerbread spice and coffee powder.

    Dissolve baking soda in 1 tablespoon of lukewarm beer. Mix 140 ml beer and eggs and stir into the dough mixture. Place 2 paper cups in each well of the muffin tin (24 wells of 5 cm Ø each).

    Fill half of the dough into a piping bag and distribute into the moulds. Bake in the preheated oven (electric cooker: 175 °C/ convection oven: 150 °C/ gas: level 2) for approx. 25 minutes. Remove the finished tartlets from the mould and repeat the process with the remaining dough.

    Mix 1-2 tablespoons Guinness and icing sugar until smooth. Decorate cooled down tartlets with the icing.
