Clean and wash the rocket or spinach and drain well. Cut into strips except for a little bit for garnishing. Drain olives and cut into slices. Crumble the cheese. Peel garlic and press it through a garlic press
Cook penne in plenty of boiling salted water for about 12 minutes
Roast pine nuts in a pan without fat. Remove. Heat the oil in the pan. Add garlic, cheese, rocket or spinach and olives and fry briefly while turning. Drain pasta well and fold in with the pine nuts. Season to taste with salt and pepper. Garnish with rocket or spinach
