Ingredients

  • 3 Stem(s) Parsley
  • 25 g Parmesan cheese
  • 25 g Breakfast bacon in slices
  • 2 TEASPOONS Olive oil
  • 1/2 Garlic clove
  • 200 g fresh gnocchi (cooling shelf)
  • 50 g Whipped cream
  • 1 Egg yolk (size M)
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper

Directions

    Wash the parsley, dab dry, pluck the leaves from the stalks and chop finely, except for something to garnish. Grate 15 g Parmesan finely. Cut bacon into strips. Heat 1 tsp. oil in a frying pan.

    Leave bacon strips in it until crispy. Peel garlic, dice finely and fry briefly. Remove everything. Add 1 tsp. oil to the frying fat and heat. Fry the gnocchi for 4-5 minutes while turning. Whisk cream, egg yolk, chopped parsley except for a little bit for sprinkling and parmesan, season with salt and pepper.

    Add the bacon strips and add to the gnocchi, mix everything and remove from the heat immediately. Slice 10 g Parmesan cheese. Arrange gnocchi, sprinkle with chopped parsley and parmesan and cover with parsley leaves.
