Penne with broccoli, bacon and anchovy fillets

Ingredients

  • 1-2 Heads Broccoli
  • 2 big red onions
  • 2 Garlic cloves
  • 1 collar flat leaf parsley
  • 100 g Pancetta (Italian smoked bacon)
  • 8 Anchovy fillets
  • 500 g short noodles (e.g. penne)
  • 7-10 Tbsp Salt
  • 4-6 Tbsp Olive oil
  • 1-2 dried chillies

Directions

    Cut the broccoli into small florets. Dice onions and garlic. Peel and chop the parsley leaves. Finely dice the bacon. Wash and chop anchovy fillets. Put the pasta in plenty of boiling salted water and cook for about 11 minutes until al dente.

    Add the broccoli florets 3-5 minutes before the end of the cooking time, depending on their size, and cook at the same time. Heat the oil in a frying pan. Fry the bacon in it. Add onions, garlic and crumbled chilli pieces. Finally, fry the anchovies briefly and remove from the heat.

    Drain the pasta and broccoli and collect some cooking water. Add the pasta and broccoli to the pan and mix with the sauce. Stretch with cooking water as required. Sprinkle with parsley.
