Coarsely hook olives and mix with breadcrumbs and herbs. Cut sheep's cheese into thicker slices. Put two slices in each case in a small casserole dish. Sprinkle with the olive mixture and drizzle olive oil over it.
Bake in the preheated oven for about 10 minutes. Sprinkle with fresh thyme if desired. Roasted baguette tastes good with it.
