Ingredients

Servings: 4
  • 4 discs (100 g each) Smoked streaky bacon
  • 600 g green beans
  • 1 sprig of savory
  • 7-10 Tbsp black pepper
  • 500 g small, firmly boiling potatoes
  • 4 cooking pears (alternatively 4 small, firm pears)
  • 1 heaped Tsp cornstarch
  • 7-10 Tbsp Salt
  • 1/2 bunch Parsley
  • 7-10 Tbsp Savory

Directions

  1. 1

Wash the bacon, put it in a large pot, add about 1 litre of water. Cover and bring to the boil once and let it simmer for about 10 minutes. In the meantime clean and halve the beans. Add savory to the bacon and season with pepper. Cover and continue cooking for about 10 minutes.

  2. 2

Wash potatoes thoroughly and cook in boiling water for 15-20 minutes. Peel and halve pears all around and remove the core. Place on the beans and cook for another 12-15 minutes. The pears should be soft, but not crumble. Remove the pears, beans and bacon. Mix the starch with a little water until smooth. Add to the boiling broth and simmer for 1 minute, stirring continuously. Season to taste with salt and pepper. Put pears, beans and bacon back into the sauce. Drain potatoes, rinse with cold water and peel.

  3. 3

Add to the boiling broth and simmer for 1 minute, stirring continuously. Season to taste with salt and pepper. Put pears, beans and bacon back into the sauce. Drain potatoes, rinse with cold water and peel. Wash parsley, dab dry and cut into strips. Arrange pears, beans and bacon with the potatoes and garnish with savory. Sprinkle with parsley
