Ingredients

Servings: 4
  • 3 Eggs (Gr. M)
  • 1 pck. Vanilla sugar
  • 7-10 Tbsp Salt
  • 6 TABLESPOONS Milk
  • 150 ml Milk
  • 150 g Flour
  • 1 Msp. Baking Powder
  • 2 TABLESPOONS Raisins
  • 3 TABLESPOONS Sugar
  • 3 small pears (approx. 120 g each; e.g. Williams Christ)
  • 2 TABLESPOONS clarified butter
  • 2 TABLESPOONS Butter
  • 7-10 Tbsp Icing sugar
  • 100 g Cranberries (glass)

Directions

    Separate eggs. Whisk the egg yolks, vanilla sugar, 1 pinch of salt and 6 tablespoons of milk. Mix flour and baking powder. Gradually add 150 ml milk to the egg yolk mixture. Stir in raisins. Let the dough swell for about 10 minutes. Beat the egg whites until stiff, adding 1 tbsp. sugar. Carefully fold the beaten egg whites into the dough.

    Peel, quarter, core and cut the pears into thin slices. Heat 1 tbsp. clarified butter in a pan. Briefly sauté half the pears in it. Pour half of the dough over it and fry over low heat until golden brown.

    Quarter the dough, turn it, tear it into pieces with two forks and turn it again. Add 1 tablespoon butter in pieces and 1 tablespoon sugar and also fry until golden brown. Keep warm. Bake remaining pears, dough, butter and sugar in the same way. Dust with icing sugar and serve with cranberries.
