Peach yoghurt with coconut

Ingredients

Servings: 4
  • 1 can(s) (425 ml) Peaches or apricots
  • 300 g Whole milk yoghurt
  • 2 TABLESPOONS Coconut flake
  • 1 Lemon
  • 2 TABLESPOONS Sugar
  • 200 g Whipped cream
  • 1 package Cream stabiliser
  • 1 package Vanillin sugar
  • 4 untreated lemon wedges and lemon balm for decoration

Directions

    Drain the peaches and collect the juice. Cut peaches smaller. Put 1-2 tablespoons of juice into a high mixing bowl and puree with the chopping stick

    Mix peach puree and yoghurt until smooth. Stir in grated coconut. Squeeze lemon. Season the cream with lemon juice and sugar

    Whip the cream until stiff, adding cream firming agent and vanillin sugar. Fold into the peach yoghurt. Pour everything into 4 dessert glasses. Possibly with

    Decorate lemon wedges and lemon balm

    If you don't want to puree the peaches separately, you can also dice them finely and stir them into the yoghurt. It is even easier if you add 4-5 tbsp. jam to the yoghurt. So that it doesn't get too sweet, leave out the sugar, and instead of yoghurt, the dessert is just as good with soured milk or kefir
