Peach-lime jam

Ingredients

  • 7-10 Tbsp a good 1 kg peaches
  • 7-10 Tbsp (about 8 pieces)
  • 2 Limes
  • 500 g Extra gelling sugar
  • 4 cl Gin

Directions

    Cut the peaches crosswise and blanch them briefly in boiling water. Peel skin. Cut peaches in half, remove stone and cut the flesh into cubes. Wash limes hot, rub dry.

    Grate the peel and squeeze the juice. Mix peach pieces, lime juice and peel and gelling sugar. Bring to the boil while stirring and boil for 3 minutes until bubbly. Stir from time to time. Add gin.

    Immediately fill into clean glasses and close them.
