Passion fruit sorbet with mint

Ice, ice, baby! To top off the day, we treat ourselves to homemade passion fruit sorbet. You only need 4 ingredients - and a little patience.

Ingredients

Servings: 4
  • 125 g Sugar
  • 6 large passion fruit
  • 4 Stem/s Mint
  • 225 ml Orange juice

Directions

    Bring sugar and 1⁄8 l water to the boil in a small pot and simmer until the sugar is dissolved. Let the syrup cool down and put it in a cool place.

    Halve the passion fruit and remove the flesh (results in approx. 150 ml). Wash mint, shake dry and pluck off leaves. Mix the passion fruit pulp, orange juice and mint in a blender until the mint is chopped. Pour the mixture into a sieve and collect the juice. Chill for about 30 minutes.

    Mix the cooled juice and syrup and freeze in an ice cream machine to form sorbet. Arrange the finished sorbet in cups.

    Without ice cream machine: Pour the mixture into a metal bowl and then place it in the freezer to cool. Stir every 30 minutes with a fork until the mixture is frozen.
