Pour 1 litre of boiling water over the tea and let it steep for about 4 minutes. Peel and grate ginger. Cut passion fruit in half and scrape out the flesh. Pour tea through a sieve. Add honey, lemon juice, ginger and passion fruit and chill for about 1 hour. Pour iced tea through a sieve and arrange in glasses with ice cubes
