Wash the parsley, dab dry and pluck the leaves from the stalks. Finely puree the parsley leaves, almonds and oil with a hand blender. Press the garlic through a garlic press and add.
Season with salt and pepper. Wash the lower legs and dab dry. Rub with salt and pepper. Place on a greased baking tray and bake in a preheated oven (electric cooker 175 °C/ gas: level 2) for 25-30 minutes.
Remove, spread with pesto and serve. (Variation: Use other herbs, e.g. mint).
