Mint mascarpone cream in wafer

Ingredients

  • 500 g Strawberries
  • 2 TABLESPOONS Sugar
  • 250 g Mascarpone (Italian double cream cheese)
  • 50 g Low-fat curd
  • 2 TABLESPOONS Icing sugar
  • 1 package Vanillin sugar
  • 1 TABLESPOON Poppy
  • 2 TABLESPOONS Lemon juice
  • 1-2 TEASPOONS clear mint liqueur
  • 8 (approx. 48 g) Butter wafers
  • 7-10 Tbsp Munt en papaverzaad

Directions

    Wash, clean and halve the strawberries. Sprinkle fruits with sugar and let them stand for at least 1/2 hour. In the meantime, stir mascarpone, quark, icing sugar, vanillin sugar, poppy seeds, lemon juice and mint liqueur until smooth.

    Form large balls from it. Place between two waffles. Add strawberries. Decorate with mint leaves and serve sprinkled with poppy seeds.
