Wash parsley, dab dry, pluck leaves from the stalks and chop finely. Peel shallots and garlic. Cut the chilli lengthwise and remove the seeds. Wash, quarter and seed the tomatoes and peppers and cut the flesh into fine cubes. Finely dice shallots, garlic, chilli and olives. Prepare pasta in boiling salted water according to package instructions. Heat the oil in a frying pan.
Fry all ingredients except parsley and noodles. Deglaze with stock and simmer for 2-3 minutes. Season with salt, pepper and cinnamon. Drain the tuna. Roughly slice with a fork. Arrange pasta, sauce and tuna on plates
