Wash the thyme, shake dry and chop the leaves of 3 stems coarsely. Drain the peppers and cut them into small cubes. Finely chop 1/2 clove of garlic from the jar of peppers.
Mash sheep's cheese with a fork. Stir in sour cream, 1 tablespoon paprika oil from the jar, paprika cubes, garlic and thyme and season with pepper. Garnish with thyme before serving.
