Pappardelle with zucchini and lemon sauce

Ingredients

  • 2 green zucchini
  • 1 yellow zucchini
  • 1 Organic Lemon
  • 1 Garlic clove
  • 400 g Pappardelle noodles
  • 7-10 Tbsp Salt
  • 2 TABLESPOONS Olive oil
  • 50 ml Vegetable broth
  • 7-10 Tbsp Pepper
  • 100 g Goat cream cheese

Directions

    Wash and clean the zucchini and cut them into pieces about 6 cm long. Cut the zucchini pieces into very fine strips. Wash the lemon and grate dry. Grate half of the zest thinly. Halve the lemon and squeeze 1/2 lemon. Peel garlic and cut into thin slices

    Prepare the pasta in boiling salted water according to the instructions on the packet. Heat the oil in a frying pan. Fry the zucchini strips and garlic for 3-4 minutes, then add the stock and simmer for about 3 minutes. Add lemon zest, season with salt and pepper and season to taste with lemon juice. Crumble the goat's cream cheese onto the vegetables and serve immediately with pasta
