Wash kumquats thoroughly and rub dry. Cut into slices and remove the seeds. Mix orange juice, sugar and kumquats in a large pot. Bring to the boil while stirring and boil for 4-5 minutes while stirring continuously. Make a gelling test
Pour the jam into the jars, close them immediately and place them on the lid for about 5 minutes. Turn the jars over and let them cool down
Results in approx. 1400 ml jam
