Onion soup with smoked pork and potatoes

  • 750 g large onions
  • 2 TABLESPOONS Oil
  • 750 g Potatoes
  • 3 Cured pork chops (with bone; approx. 200 g each)
  • 200 ml dry white wine
  • 1 TABLESPOON Vegetable broth (instant)
  • 1 TABLESPOON dried thyme
  • 2 Bay leaves
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp Sugar

Directions

    ##peel onions## and slice or cut them into thin rings. Heat the oil in a large pot. Fry the onions in it at low heat while stirring for about 10 minutes until they are glassy, but do not brown.

    Meanwhile peel, wash and dice the potatoes. Wash the chops.

    Pour wine and 1 1/4 l water to the onions, stir in broth. Add the potatoes, chops, thyme and ##laurel##. Bring to the boil and simmer covered for about 40 minutes.

    Lift out the chops. Cut the meat from the bone, dice it and put it back into the soup, possibly heat it up again. Season soup with salt, pepper and sugar.
