Ingredients

  • 25 g Baby salad mix
  • 25 g Lamb's lettuce
  • 4 ripe figs
  • 50 g Pecan nuts (or walnuts)
  • 2 TABLESPOONS Sugar
  • 7-10 Tbsp salt, pepper
  • 3-4 Tbsp dark balsamic vinegar
  • 400 g Cottage cheese
  • 2 TABLESPOONS liquid honey
  • 2 TABLESPOONS grated horseradish
  • 25 g Hard cheese (e.g. ComtĂ©)
  • 3 Tomatoes
  • 1 (approx. 500 g) Ciabatta
  • 1 (approx. 250 g) Baguette
  • 75 g cooked ham in very thin slices

Directions

    Clean and wash the salad mix and lamb's lettuce separately and drain well. Wash figs and cut into slices. Roast the nuts in a pan without fat. Sprinkle with 2 tablespoons of sugar and allow to caramelize.

    Deglaze with vinegar and 2 tablespoons of water and simmer briefly. Stir in figs.

    Mix cottage cheese, honey and horseradish. Season to taste with pepper and a little salt. Slice hard cheese into fine shavings with a peeler. Wash and slice the tomatoes.

    Cut both loaves lengthwise first, but do not cut through. Then cut them into thirds crosswise. Fill the ciabatta with cottage cheese, salad mix and tomatoes. Fill the baguette with ham, lamb's lettuce, fig mixture and cheese shavings.

    Prepare the sandwiches.
