Drain the olives and chop them finely, except for 1 olive. Wash the coriander and remove the leaves. Put 1 leaf aside. Cut the rest into strips and place in a bowl with the olives.
Add lemon juice, stir in olive oil and season to taste with salt, pepper and 1 pinch of sugar. Coarsely chop the pink berries and fold in. Arrange in a bowl and garnish with 1 olive and coriander.
