Oat and potato pancakes with apple compote

Ingredients

  • 500 g Apples
  • 7-10 Tbsp Juice of 1 lemon
  • 1 stick of cinnamon
  • 1/2 Vanilla pod
  • 75 g Sugar
  • 750 g Potatoes
  • 1 Onion
  • 2 Eggs
  • 75 g Flour
  • 100 g crunchy oats
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 6 TABLESPOONS Oil
  • 7-10 Tbsp Oatmeal
  • 7-10 Tbsp Lemon balm and apple slices

Directions

    Peel and quarter the apples and remove the core. Cut quarter into pieces. Boil up with lemon juice, cinnamon stick, vanilla pod, sugar and 200 ml water. Steam over low heat until soft. Remove the cinnamon stick and vanilla pod and let them cool down. Wash and grate the potatoes. Peel and grate onions and add to the potatoes.

    Stir in eggs, flour and oatmeal. Season with salt and pepper. Heat the oil in portions. Fry about 12 buffers from the dough. Arrange the potato pancakes with the apple compote on plates. Sprinkle with oat flakes and garnish with lemon balm and apple wedges.
