Noodles with spicy tomato sauce and broccoli

Ingredients

Servings: 4
  • 500 g Broccoli
  • 7-10 Tbsp Salt
  • 1 Onion
  • 1 Garlic clove
  • 2 TABLESPOONS Olive oil
  • 1 TABLESPOON Flour
  • 1 TEASPOON Cayenne pepper
  • 2 packages (370 g each) chunky tomatoes with herbs
  • 400 g large spiral noodles
  • 50 g Parmesan cheese
  • 1/2 bunch Basil

Directions

    Clean the broccoli, divide into florets and blanch in boiling salted water for 4-5 minutes. Rinse in cold water, drain and set aside. Peel onion and garlic.

    Finely chop the onion. Press the garlic through a garlic press. Heat oil in a pot. Sauté onion and garlic until transparent. Dust with flour and cayenne pepper and sauté. Add tomato sauce while stirring and bring to the boil.

    Add broccoli and bring to the boil once. Cook pasta in boiling salted water according to package instructions. Meanwhile slice parmesan. Wash basil and shake dry. Pluck the leaves from the stems, except for a few for garnishing, chop them finely and stir into the sauce.

    Arrange noodles and sauce on plates. Sprinkle with Parmesan cheese and garnish with remaining basil.
