Prepare the pasta in boiling salted water according to the instructions on the packet, drain, rinse with cold water and drain. Drain pickled tomatoes and cut into strips. Wash the tomatoes, dab dry and cut in half.
Wash and clean the rocket and pluck it a little smaller. Peel garlic and chop finely. Wash and dry lemon. Finely grate the peel. Halve lemon and squeeze juice. Mix lemon juice, lemon zest and garlic.
Season with salt, pepper and 1 pinch of sugar. Fold in olive oil. Mix pasta, tomatoes and vinaigrette. Fold in the rocket. Arrange on plates and sprinkle with parmesan.
