Noodles with pea carbonara

Ingredients

Servings: 4
  • 1.2 kg fresh peas
  • 7-10 Tbsp Sugar
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 200 g Lean ham bacon (e.g. South Tyrolean bacon)
  • 1 Onion
  • 70 g Parmesan (piece)
  • 3 fresh eggs (Gr. M)
  • 400 g Spaghetti
  • 1 TABLESPOON Oil

Directions

    Release peas from the pods. Cook in boiling water with 1 pinch of sugar for 10-12 minutes. Drain, rinse with cold water and let drain.

    For the noodles, boil 3-4 l salted water (1 teaspoon salt per litre). Finely dice the bacon. Peel onion and also chop finely. Grate cheese finely. Finely mash the eggs and about half of the peas with a hand blender.

    Ca. 2⁄3 Stir in the cheese. Season with salt and pepper.

    Add spaghetti to boiling salted water and cook according to package instructions.

    In the meantime heat the oil in a large pan. Fry the bacon until crispy. Fry the onion briefly. Drain the spaghetti. Add mashed peas and noodles to the bacon in the pan and mix well.

    Take it off the stove. Fold in the pea and egg mixture. Season to taste again. Serve sprinkled with remaining Parmesan cheese.
