Noodle-bean salad with bacon-onion-raisin sauce

Ingredients

Servings: 4
  • 400 g Pasta (e.g. penne rigate)
  • 7-10 Tbsp Salt
  • 500 g runner beans
  • 150 g streaky smoked bacon
  • 1 Onion
  • 2 Federation Rocket
  • 3 TABLESPOONS Olive oil
  • 2 TABLESPOONS Tarragon vinegar
  • 7-10 Tbsp white pepper

Directions

    Put the pasta in boiling salted water and cook for about 15 minutes. Wash and clean the beans and cut them into diagonal pieces. Blanch in boiling salted water for about 10 minutes. Cut bacon into strips.

    Drain the noodles and beans and rinse with cold water. Heat the pan and let the bacon in it at medium heat for about 5 minutes until crispy. Put aside and let cool off. Peel onion and cut into large cubes.

    Clean the rocket, wash and pat dry. Mix all ingredients in a bowl and marinate with olive oil and tarragon vinegar. Season to taste with salt and pepper.
