Mozzarella toast with tomatoes

Ingredients

Servings: 4
  • 4 Tomatoes
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 1/2 Pot of basil
  • 2 (125 g each) Balls Buffalo Mozzarella
  • 8 discs Toast
  • 3 Eggs
  • 3 TABLESPOONS Milk
  • 2 TABLESPOONS Flour
  • 6 TABLESPOONS Olive oil

Directions

    Wash and clean the tomatoes and carve them crosswise. Blanch in boiling water for about 1 minute. Take out the tomatoes and rinse with cold water. Peel tomato skin, halve the fruit and remove seeds. Cut the fruit flesh into small cubes, season with salt and pepper. Wash the basil, shake dry, pluck the leaves from the stalks, except for a little garnish.

    Cut the mozzarella into slices. Cover 4 slices of toast with mozzarella and basil, place diced tomatoes on top. Place 1 slice of toast on each and press on

    Whisk eggs and milk in a deep plate. Turn toasts in flour and egg milk one after the other. Heat oil in portions in a coated pan. Fry the toast in portions on each side for 3-4 minutes until golden brown. Drain on kitchen paper, keep warm and do the same with the rest of the bread. Arrange the breads and garnish with basil
