Ingredients

Servings: 4
  • 175 g Flour
  • 1 pinch Sugar
  • 7-10 Tbsp Salt
  • 1 egg (size S)
  • 12 g fresh yeast
  • 2 Garlic cloves
  • 1 TEASPOON + 1 tablespoon of olive oil
  • 1 medium onion
  • 250 g Beefsteak minced meat (Tatar)
  • 2 TABLESPOONS Tomato paste
  • 1 TEASPOON dried oregano
  • 7-10 Tbsp Pepper
  • 1 package (180 g) low-fat sheep cheese (e.g. Salakis)
  • 500 g smaller tomatoes
  • 30 g Olives
  • 7 Pepperoni
  • 2 TABLESPOONS Aiwar (spicy-hot spice paste)
  • 7-10 Tbsp Oregano
  • baking paper
  • 7-10 Tbsp Flour

Directions

    Mix flour, sugar and 1/2 teaspoon salt in a mixing bowl. Dissolve yeast in 125 ml lukewarm water. Add egg and yeast mixture to the flour and knead to a smooth dough with the dough hooks of the hand mixer. Cover and leave to rise in a warm place for about 45 minutes. In the meantime peel garlic and dice finely. Heat 1 teaspoon of olive oil in a frying pan and fry the garlic briefly at low heat.

    Remove and let cool off. Peel and finely dice the onion. Heat 1 tablespoon of oil in a frying pan and sauté the onion. Add minced meat, tomato paste and oregano and fry until golden brown. Season with salt and pepper and let it cool down a bit. Drain cheese and cut into cubes. Wash, clean and slice the tomatoes. Drain olives and pepperoni. Knead the dough on a floured work surface again and add the garlic. Roll out the dough into an oval. Place on a baking tray lined with baking paper and spread with aiwar. Spread minced meat, cheese, tomatoes, olives and pepperoni on top.

    Wash, clean and slice the tomatoes. Drain olives and pepperoni. Knead the dough on a floured work surface again and add the garlic. Roll out the dough into an oval. Place on a baking tray lined with baking paper and spread with aiwar. Spread minced meat, cheese, tomatoes, olives and pepperoni on top. Bake on the lower shelf in a preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for 20-25 minutes. Remove from the oven, garnish with oregano leaves and serve immediately
