Meatballs on lamb's lettuce

Ingredients

Servings: 4
  • 1 Bread roll (from the previous day)
  • 400 g White cabbage
  • 7 TABLESPOONS Vinegar
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Cayenne pepper
  • 1 TEASPOON Sugar
  • 400 g Carrots
  • 8-9 Tbsp Oil (e.g. sunflower oil)
  • 1 Onion
  • 125 g Lamb's lettuce
  • 1 Egg
  • 400 g mixed minced meat
  • 7-10 Tbsp Pepper
  • 150 g farmhouse bread
  • 7-10 Tbsp wooden skewers

Directions

    Soak rolls in cold water. Clean the cabbage, first cut into slices, then into fine strips. Heat 5 tablespoons of vinegar. Season with salt, cayenne pepper and sugar. Pour over the cabbage and knead briefly with your hands.

    Roughly grate the carrots. Clean lamb's lettuce, wash thoroughly, drain well. Mix cabbage, carrots and 3 tablespoons of oil. For the balls, finely dice onion. Knead the squeezed bread roll, onion, egg and minced meat.

    Season with salt and pepper. Form small balls from it, put them on skewers and fry them in 2 tablespoons of hot oil all around for about 4 minutes. Season the rest of the vinegar with salt, pepper and a little sugar. Add 2 tablespoons of oil.

    Turn lamb's lettuce in it. Cut the bread into pieces. Fry in the remaining hot oil. Season salads if necessary and serve.
