Matjes roll on apple

Ingredients

  • 1 Onion
  • 3 Gherkins (approx. 35 g each)
  • 3 sour apples
  • 1 collar Dill
  • 150 g Whole milk yoghurt
  • 150 g clotted cream
  • 2 TABLESPOONS apple juice
  • 7-10 Tbsp Salt
  • 7-10 Tbsp freshly ground white pepper
  • 1 pinch Sugar
  • 10 Matjes fillets (approx. 50 g each; e.g. smokis; smoked)
  • 2-3 TABLESPOONS fresh squeezed lemon juice
  • 7-10 Tbsp wooden skewers
  • 7-10 Tbsp salad, radishes, cranberries in own juice and dill

Directions

    For the cream, peel and finely dice the onion. Finely dice the gherkins. Wash 1 apple, quarter, core and finely dice. Wash the dill, dab dry and chop finely. Mix yoghurt, sour cream and apple juice.

    Stir in onion, apple, cucumber and dill. Season to taste with salt, pepper and sugar. Leave in a cool place for about 30 minutes. Meanwhile wash the fish, dab dry and cut in half lengthwise. Roll up the fillets and pin them with a wooden skewer. Wash the remaining apples, cut into quarters and remove the core. Cut apples into about 20 fine slices. Sprinkle with lemon juice. Place a fish roll on each apple slice. Arrange on a platter, dress with salad and radishes as desired.
