Spareribs with BBQ sauce and potato wedges

Ingredients

  • 50 ml Soy sauce
  • 50 ml Worcestershire sauce
  • 100 g Ketchup
  • 50 ml Balsamic vinegar
  • 2 TABLESPOONS liquid honey
  • 1 TEASPOON 4-spice
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 2 kg short spare ribs (ladder ribs)
  • 1.2 kg Potatoes
  • 3-4 Tbsp Olive oil
  • 7-10 Tbsp Cling film

Directions

    Mix soy sauce, Worcestershire sauce, ketchup, vinegar, honey and spices in a pot. Season with salt and pepper and heat for about 5 minutes at low heat.

    Wash the spare ribs, dab them dry, place them on the fat pan of the oven and spread with half of the marinade. Pour on 100-150 ml of water and bake in a preheated oven (electric cooker: 150 °C/ circulating air: 125 °C/ gas: see

    manufacturer) 2 1/2-3 hours while turning regularly, brushing with the remaining marinade about 1 hour before the end of the cooking time. If the marinade starts to get too dark or burns, add some water.

    Wash the potatoes and cook in boiling water for about 20 minutes. Drain potatoes, cut into quarters lengthwise and let cool down a little.

    About 30 minutes before the ribs are done, heat the oil in portions in a large pan. Fry the potatoes in portions for about 10 minutes until golden brown. Take them out, put them on a baking tray and put them under the ribs in the oven.

    Cut the ribs into pieces and serve with the potatoes.
