Matjes potato salad

Ingredients

  • 750 g Potatoes
  • 1 package (300 g) deep-frozen French beans or broad beans
  • 7-10 Tbsp Salt
  • 2 medium red onions
  • 8 Matie's fillets
  • 4 sour apples
  • 2 TABLESPOONS Lemon juice
  • 150 g streaky smoked bacon
  • 7-10 Tbsp Dill
  • 7-10 Tbsp hard-boiled egg
  • 4-6 Tbsp Vinegar
  • 2 TEASPOONS medium hot mustard
  • 7-10 Tbsp black pepper
  • 1 pinch Sugar
  • 7-10 Tbsp éventuellement un peu de sel

Directions

    Wash the potatoes and cook covered with water for about 20 minutes. Cook the beans in little boiling salted water for 15-20 minutes. Peel and thinly slice the onions. Wash and dry the matie filets briefly and cut them into bite-sized pieces.

    Wash apples, quarter them, remove seeds and cut them crosswise into slices. Immediately sprinkle with some lemon juice so that they do not turn brown. Drain the potatoes, peel them and let them cool down a little.

    Then cut into slices. Drain the beans and cut into pieces. Mix all prepared ingredients carefully. For the marinade, mix vinegar, mustard, pepper and sugar. Season to taste and pour over the salad.

    Mix carefully and leave to soak for at least 1/2 hour. Dice bacon and fry until crispy. Mix into the salad before serving and season to taste again. Wash the dill. Cut egg into slices.

    Garnish salad egg and dill.
