Ingredients

  • 1.5 kg Potatoes
  • 7-10 Tbsp Salt
  • 7 g dried porcini
  • 7-10 Tbsp ½ Bunch of rocket
  • 400 ml Milk
  • 100 g Butter
  • 7-10 Tbsp grated nutmeg
  • 7-10 Tbsp ½-1 Tsp curry
  • 50 g Raisins
  • 75 g black olives (without stone)
  • 7-10 Tbsp Coriander leaves and chives

Directions

    Peel the potatoes, possibly cut in half, wash and cook in boiling salted water for about 25 minutes. In the meantime, pour 5 tablespoons of boiling water over the porcini. Wash the rocket, shake dry and cut into strips, except for something to garnish.

    Pour the porcini mushrooms into a sieve, collecting the water. Finely chop the porcini. Heat the porcini water. Drain potatoes, add butter and mash with a potato masher. Add milk bit by bit.

    Season with salt and nutmeg. Cut the mashed potatoes in thirds. Season 1/3 with curry and add raisins. Garnish with coriander leaves. Mash porcini water under the second third and add the porcini.

    Garnish with chives. Add rocket and olives to the remaining mashed potatoes. Garnish with rocket.
