Peel and wash the potatoes and cut them into thin slices. Heat oil in a pan and fry the slices in it until golden brown and salt them. Whisk eggs and milk. Season with salt, pepper and nutmeg.
Pour over the potatoes. Leave to stand on a low heat. Cut the ham into cubes. Wash the chives and cut into fine rolls. Turn out farmer's breakfast on a plate and sprinkle with ham and chives.
Mixed pickles taste good with it.
