Marzipan waffles with plum compote

Ingredients

  • 1 glass (720 ml) Plums
  • 10 g Ginger Tuber
  • 1 package Sauce powder "Vanilla flavor
  • 2 TABLESPOONS Honey
  • 2-3 TABLESPOONS Lemon juice
  • 100 g Butter or margarine
  • 4-5 Tbsp Sugar
  • 1 pinch Salt
  • 3 Eggs (size M)
  • 200 g Flour
  • 1 coated Tsp Baking Powder
  • 200 g Whipped cream
  • 100 g Marzipan raw mass
  • 7-10 Tbsp Peppermint
  • 7-10 Tbsp Grease

Directions

    Pour the plums into a sieve, drain well and collect the liquid. Peel ginger and grate finely. Fill up the collected juice to 400 ml with water and bring to the boil in a saucepan. In the meantime, stir the sauce powder and 4-5 tbsp water until smooth.

    Stir into the boiling liquid and simmer for about 1 minute while stirring. Season to taste with honey, ginger and lemon juice. Carefully mix in the plums. Pour the compote into a bowl and let it cool down

    Meanwhile, for the wafer dough, whip the fat, sugar and salt until creamy with the whisk of the hand mixer. Stir in the eggs one after the other. Mix flour and baking powder and stir in alternately with the cream. Coarsely grate marzipan and mix into the dough. Preheat waffle iron (approx. 18 x 9 cm) and grease. Put about 2 tbsp.

    of dough in the middle of each waffle iron and bake until golden yellow. Bake another 5 waffles from the remaining dough in the same way. Halve the waffles as you like and arrange them on plates with some plum compote. Decorate with mint. Cinnamon cream tastes good with it
