Marinated strawberry carpaccio

Ingredients

  • 500 g Strawberries
  • 100 ml Maple syrup
  • 2-3 TABLESPOONS Almond liqueur (e.g. Amaretto)
  • 1 TABLESPOON Grümmel rock candy
  • 20 g flaked almonds
  • 250 g Low-fat curd
  • 1 package Vanillin sugar
  • 50 g Sugar
  • 50 g Fresh cream
  • 2-3 TABLESPOONS Mineral water
  • 7-10 Tbsp Grümmel rock candy

Directions

    Wash and drain the strawberries. Clean strawberries, except for 2 for decoration, and cut them into thin slices. Mix maple syrup and almond liqueur. Mix in candy. Arrange the strawberry slices in a fan shape on 4 small plates.

    Spread the marinade evenly over it. Leave to soak for approx. 15 minutes. In the meantime roast the almonds in a small pan without fat until golden. Mix quark, vanillin sugar, sugar, crème fraîche and mineral water.

    Put a blob of cream in the middle of each strawberry. Cut the strawberries in half and put them into a blob each. Serve with flaked almonds and sprinkled with rock candy as desired.

    Amarettinis are delicious with it.
