Lukewarm bread salad with salsicce

Ingredients

  • 750 g Tomatoes
  • 1 collar (approx. 200 g) Spring onions
  • 6 Stem(s) Parsley
  • 1 (approx. 300 g) Ciabatta bread
  • 10 TABLESPOONS White wine vinegar
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 1 TEASPOON Sugar
  • 13 TABLESPOONS Olive oil
  • 4 Salsicce (à approx. 100 g; Italian sausage with fennel)

Directions

    Wash the tomatoes and cut into large pieces. Clean and wash spring onions and cut them diagonally into rings. Wash parsley and cut into fine strips, except for something to garnish.

    Cut bread into thin slices and cut each slice into 3 pieces. Mix vinegar and 2 tablespoons of water. Season with salt, pepper and 1 pinch of sugar. Fold in 2 tablespoons of oil. Cut ##sausage## into rough pieces.

    Heat 1 tablespoon of oil in a large frying pan. Fry the sausage in it all around for about 5 minutes and take it out of the pan. Heat 5 tablespoons of oil in the frying oil. Fry half ##bread## in the remaining oil as well.

    Mix sausage, bread, spring onions, tomatoes and parsley. Pour vinaigrette over it. ##Salad## mix well and arrange. Garnish with the rest of the parsley.
